Hey almond lovers! National Almond Day is coming up on February 16th. This nutty holiday celebrates all things almond. Time to get a little nutty with our favourite healthy snack.
Almonds have been around for centuries and were one of the first domesticated crops. Originating in the Middle East, these nuts have been used for their delicious flavour and health benefits across many cultures. The almond is actually the seed from the almond tree fruit, which is related to peaches and cherries.
These days, almonds are grown mainly in California which produces around 80% of the world's almonds. With their high amounts of vitamin E, magnesium, fibre and protein, it's no wonder almonds remain a staple in pantries and lunch boxes everywhere. They make a satisfying crunch and add nutrient-dense goodness to both sweet and savoury dishes.
So how should we celebrate National Almond Day?
Whip up some almond butter to spread on your morning toast, blend almond milk into a smoothie, or get creative and make some almond flour muffins. Spread almond joy by sharing homemade almond snacks with your colleagues. How about baking a batch of almond biscotti for your family and friends. And of course, you can just snack on a handful of raw almonds for a quick protein and fibre boost.
However you choose to observe this nutty holiday, take a minute to appreciate the versatile and delicious almond. This little nut has nourished people for thousands of years and continues to be a staple superfood, especially for vegans and vegetarians. Happy National Almond Day! Go on and get a little nutty!
How to make Almond Milk:
Ingredients
• 1 cup raw almonds (soaked overnight in cool water / or 1-2 hours in very hot water)
• 5 cups filtered water
• 1 pinch sea salt
• 2 whole dates (optional / pitted / or other sweetener of choice / omit for unsweetened)
• 1 tsp vanilla extract (optional / or sub 1 vanilla bean, scraped per 1 tsp extract / omit for plain)
Instructions
Add your soaked almonds, water, salt, and any additional add-ins (optional) to a high-speed blender and blend until creamy and smooth. Keep it running for at least 1-2 minutes to get the most out of your almonds.
Strain using a nut milk bag or a thin dish towel. Lay a clean dish towel over a mixing bowl, pour over the almond milk, carefully gather the corners, and lift up. Then squeeze until all the liquid is extracted. Discard pulp, or save for later. You can add this to baked goods (especially crackers).
Transfer milk to a jar or covered bottle and refrigerate. Will keep for up to 4-5 days, though best consumed when fresh. Shake well before drinking as it tends to separate.
